Ingredients | 材料 :
  • Yield: 8 pieces | 8個
(A)
250g  Bread flour | 高根粉 (麵包粉)
  20g  Dark (or Brown) Sugar | 黑糖或黃糖
  50g  Milk | 鮮奶 (室溫)
  25g  Egg | 雞蛋
  10g  Unsalted butter | 無鹽牛油 (室溫)
    3g  Yeast | 酵母 (依士)
100g  Warm water | 暖水


(B) Stuffing | 餡料 : 400g Red Bean Paste | 紅豆餡 (Steps | 做法)

200g Little Red bean | 小紅豆
1000g Water, adapt as needed | 水,有須要作適當調整
60g Brown Sugar | 黃砂糖

  1. 紅豆餡先做好 (做法)
  2. 基本麵糰搓揉及第一次發酵方法,參照基本麵糰製作
  3. 將發酵的麵糰分成8等份,每個約60g,鬆弛5分鐘。取出小麵糰按扁,包入餡料,做圓形,收口向下,放在已塗油的焗盤,焗盤中放入一杯熱水,蓋上保鮮紙(或大膠袋內)放溫暖地方,作最後發酵約30分鐘至1倍大。
  4. 包面輕手掃蛋液,包面可放杏仁片、南瓜子仁和芝麻。
  5. 放入已預熱至200°C的焗爐內,烘焗約10~12分鐘取出。

  1. Prepare red bean paste in advance (Steps) .
  2. Basic dough kneading and first fermentation, refer Making Basic Dough.
  3. Divide the fermented dough into 8 portions of around 60g each. Let rest for 5 minutes. Add stuffing and shape round. Put on baking tray with baking parchment, put also a cup of hot water on the tray, cover it with plastic wrap (or a large plastic bag), for final fermentation for about 30 minutes in room temperature below/around 30°C until double its size.
  4. Gently brush top with egg glaze, sprinkle with almond flakes, pumpkin seeds and sesame.
  5. Bake in 200°C preheated oven for about 10~12 minutes. Remove from oven.


Tips / 心得 :
  • 若焗爐熱力不平均,可先焗2/3時間,把焗盤轉向,再焗餘下所需時間。

  • The heat inside the oven may be uneven. Bake for the first 2/3 required time, reversed the tray, continue baking for the remaining time.
