Sweet Potato Bread | 蕃薯包

Soft and sweet, the almond flakes give extra flavor!

Ingredients | 材料 :

  • Yield: 8 numbers | 8個

250g  Bread flour | 高根麵粉 (麵包粉)
  20g  Dark (or Brown) Sugar | 黑糖或黃糖
  50g  Milk | 鮮奶 (室溫)
  25g  Egg | 雞蛋
  10g  Unsalted butter | 無鹽牛油 (室溫)
    4g  Yeast | 酵母 (依士)
    6g  Custard powder | 吉士粉
100g  Warm water | 暖水

(B) Mashed Sweet Potato Stuffing | 蕃薯蓉 (Steps | 做法)
Ingredients for 8 bread stuffing | 以下材料可做8個餡料 :
450g Steamed sweet potato | (約12両,1磅) 蕃薯蒸好
8g Whipping cream | 淡忌廉
16g Milk | 鮮奶
16g Hot water | 熱水
20g Dark or Brown Sugar | 黑糖或黃糖
5g Unsalted butter | 無鹽牛油
tiny little salt | 小許鹽

Steps | 做法 :

  1. 基本麵糰搓揉及第一次發酵方法,參照基本麵糰製作
  2. 將發酵的麵糰分成8等份,每個約60g,鬆弛5分鐘。
  3. 取出小麵糰按扁,包入蕃薯餡,做圓形,收口向下,放在已塗油的焗盤,焗盤中放入一杯熱水,蓋上保鮮紙(或大膠袋內)放溫暖地方,作最後發酵約30分鐘至1倍大。
  4. 包面輕手掃蛋液,包面可放杏仁片或芝麻。
  5. 放入已預熱至200°C的焗爐內,烘焗約10~12分鐘取出。

  1. Basic dough kneading and first fermentation, refer Basic Dough.
  2. Divide the fermented dough into 8 portions of around 60g each. Let rest for 5 minutes.
  3. Add stuffing and shape round. Put on baking tray with baking parchment, put also a cup of hot water on the tray, cover it with plastic wrap (or a large plastic bag), for final fermentation for about 30 minutes in room temperature below/around 30°C until double its size.
  4. Gently brush top with egg glaze, sprinkle with almond flakes or sesame.
  5. Bake in 200°C preheated oven for about 10~12 minutes. Remove from oven.

  6. Tips / 心得 :

    1. 若焗爐熱力不平均,可先焗2/3時間,把焗盤轉向,再焗餘下所需時間。
    2. 蕃薯餡材內加小許瓜子仁(如: 葵花子仁,南瓜子仁)可增加口感。

    3. The heat inside the oven may be uneven. Bake for the first 2/3 required time, reversed the tray, continue baking for the remaining time.
    4. Add small quantity seeds (eg. Sunflower seeds, pumpkin seeds) into sweet potato paste adds extra texture flavor.)
